Stuffed Acorn Squash

acorn squash
8 oz 93% lean ground turkey
1/2 cup white northern beans
85 grams grape tomatoes halved
1/4 cup onions chopped
1/2 tsp olive oil
2 tbsp shredded parmesan cheese


  1. Preheat the oven to 350F.

  2. Cut squash in half & spoon out seeds, then place on pan and bake for 30 mins.

  3. While squash is cooking heat up pan to medium-low and sauté chopped onions & tomatoes with olive oil for 5 minutes.

  4. Add ground turkey, cook through, and add desired seasonings (salt & pepper).

  5. Then add white beans, stir, and let simmer until the acorn squash is finished.

  6. Pull the acorn squash from the oven and fill each half evenly, top with a tbs. of parmesan cheese on each and put back in the oven for 25-30 mins.
